The ratio we use for each band when a brewer picks the band by name.
A band is a range, and a brewer who says "hoppy" hasn't said 2.1 or 3.9, so
we use the midpoint: 0.75 for malty (0.5–1), 1.5 for balanced (1–2), 3 for
hoppy (2–4). very-hoppy has no upper bound above 4, so it uses 5, one step
past the boundary.
Every value falls inside the band it names, so sulfateChlorideBalance
on any of them returns the same key. The cut points and the flavour claims
behind them come from PALMER_KAMINSKI_WATER_2013.
