Back-compute mash efficiency from a measured gravity and volume. This is the
exact inverse of predictGravities.
Additions that mash efficiency doesn't apply to (extract, sugar, lactose)
are subtracted first at their own fixed efficiency. What's left is divided
by the theoretical maximum of the mashed grain.
Returns NaN when the grist has nothing that mash efficiency applies to. An
all-extract recipe has no mash efficiency, and reporting 0 % would claim a
value that doesn't exist. Callers should show it as "—".
