pKa values are the standard 25 °C thermodynamic constants (CRC Handbook,
97th ed.). Densities are 20 °C solution densities from the CRC and Perry's
tables, given at the strengths brewers buy and linearly interpolated between
them. Inside the tabulated range the interpolation error is well under
0.5 %, which is much smaller than the ±1 % strength tolerance on a bottle of
"88 %" lactic acid.
As a cross-check, 88 % w/w lactic acid at 1.209 g/mL is
1209 × 0.88 / 90.078 = 11.81 mmol/mL, and at mash pH 5.4 it delivers
11.81 × 0.9722 = 11.48 mEq/mL. Bru'n Water and Palmer & Kaminski publish
~11.8 mEq/mL.
