    acidulatedMaltPercentLactic?: number

    Acidulated malt's lactic acid content, % by mass. Defaults to 3.

    alkalinityModel?: AlkalinityModel

    How much of the alkalinity counts. Defaults to titrated-to-mash-ph.

    assumedSourceWaterPh?: number

    pH assumed for a source water whose report does not state one. Defaults to 7.5. The prediction moves by under 0.01 pH across the whole 7.0–8.3 range that municipal water actually occupies.

    convergenceTolerancePh?: number

    Root-finder convergence tolerance, pH units. Defaults to 1e-6.

    maxIterations?: number

    Root-finder iteration cap. Defaults to 100.
