    Interface FermentablePhProperties

    Mash-pH properties.

    Every field is optional and overrides the class default. The catalog supplies measured values where a maltster publishes them; otherwise the class-based defaults in mashPh.ts apply.

    Acid content for acidulated malt, % lactic acid by mass.

    bufferingCapacityMEqPerKgPerPh?: number

    Buffering capacity, mEq of acid per kg per pH unit.

    distilledWaterPh?: number

    pH of a distilled-water mash of this malt, pH units.

    maltClass?: MaltPhClass

    Which titration curve to use. Inferred from class, colour and name when absent.
