    Function acidifyWater

    • Acid needed to bring water (typically sparge water) to a target pH.

Straight carbonate titration, no malt involved:

      acid (mEq/L) = Alk(pH_source) − Alk(pH_target)
      = C_T·[f(pH_source) − f(pH_target)]

with C_T back-calculated from the measured alkalinity and the water's pH, and f the carbonate speciation from carbonateProtonsDonated; the [H⁺] and [OH⁻] terms are dropped, as in totalCarbonateMMolPerLitre. The acid's own equivalents are then evaluated at the target pH, so a phosphoric dose isn't costed as one equivalent per mole.

Sparge water above about pH 6 strips tannins and silicates out of the husks as the grain bed's own acidity washes away. Below 5.2 there's nothing more to gain and the runnings start to taste sharp.
